Set the rice to cook in the milk and halfway through the cooking add the butter and some salt. Remove the rice from the heat and quickly mix in an egg, incorporating it well. When the mixture is cold divide it into ten parts, and into each incorporate a slice of mozzarella, half an anchovy, three or four capers, two or three stoned olives and a good pinch of black pepper. Beat the other egg, form each portion into a ball, dip it in the egg, then roll in breadcrumbs and fry.
