This Australian
goat's milk cheese is produced in the
Adelaide region, famous for it's wine industry and fabulous fresh produce.
The 45% fat soft white cheese is mousse-like when young, and hardens with maturity with a herby mushroom characteristic coming to the fore. A grey mold often forms on the wrinkled yellow rind of the mature cheese, which is usually discarded.
