Malene’s chicken mole I

Onion, chopped
3 cloves garlic, chopped
Canola oil
Chicken broth
Tomato puree
10 oz can enchilada sauce
1-2 pounds shredded or cubed cooked chicken
Soy sauce
Peanut butter
Semi sweet chocolate chips
Green chilies

Saute 1 onion and the three garlic cloves in canola oil
Add 2 T butter and ¼ C flour. Brown.
Add 2 C chicken broth, 1 C tomato puree, 1 10 oz can enchilada sauce, 1-2 pound cooked cubed or shredded chicken. Simmer 10 minutes.
Add 1 T soy sauce, 1 tsp cinnamon, ¼ C. peanut butter, ½ C semisweet chocolate chips, ½ tsp cayenne, 1T cumin, 1 can green chilies. Serve over rice.
