This is the worlds most interesting and tasty fudgey frosting. It's completely vegan for those so inclined. The making of it is fascinating and on really bad days you can just make a batch and dip pretzels or something in it.
1/3 c. water
1/4 c. cornstarch
3/4 c. pure maple syrup
1/2 c. smooth peanut butter or almond butter
1/3 c. unsweetened cocoa powder
2 tsp. vanilla
about 1/4 c. soy milk - vanilla flavor if you're feeling gourmet.
1. Place water and cornstarch in a 1 quart saucepan and stir until cornstarch dissolves. Stir in maple syrup. Do not spill on yourself if possible. Over med-high heat, bring mixture to a boil, stirring constantly. After mixture is very thick and smooth - like clear toothpaste - reduce heat to medium low and continue to cook and stir one minute longer. Yes, it's supposed to form a thick mass around the spoon. 2. Scrape mixture into a food processor. Add remaining frosting ingredients except the soy milk. blend until the food processor can't because it's too thick. Add soy milk 1-2 teaspoons at a time and blend until a very thick but spreadable consistency has been achieved. 3. Don't forget to lick the spoon when you're done.
