kotsu mushi (骨蒸し, lit. "steamed bones") is a classic
Japanese dish consisting of steamed fish heads
(usually ayu, trout) in ponzu joyu sauce.
You are supposed to eat everything (skin, eyes, etc),
leaving behind only the seven bones, which according to
Japanese popular thought all look like farming
implements.
