The traditional blue cheese of the French region of Auvergne, Bleu d'Auvergne is moist and creamy and has an even distribution of blue veins. The flavour of the cheese is described as "tart and gluey", and as the cheese ages, the interior collapses under the sticky crust and becomes exceedingly intense.
