Gippsland Blue is one of the first farmhouse cheeses to be commercially produced in Australia. It was first manufactured by the Tarago River Cheese Company, in the Gippsland district of thesouthern state of Victoria, in 1982.

Gippsland Blue is made with one-hundred percent Jersey cow's milk, giving the cheese a deeper yellow colour and a smooth and velvety mouthfeel. It's sold in round wheels and is covered in an orange rind which is mottled with blue and grey mold.

It's ripe to eat up to ten weeks from manufacture, and has a sweet buttery flavour with the sharp bite of the mold. It's a popular after-dinner cheese.
