Alitame is the most potent sweetener yet produced. It is 2000 times sweeter than sugar (aspartame is something like 300 times sweeter)! It is currently awaiting aproval for use in the US by the Food and Drug Administration.
Alitame is quite stable in neutral pH foods (pH 5 to 8), showing no decomposition for over a year at room temperature. However, if kept in a low or high pH solution or stored at elevated temperatures, the stability of Alitame is notably decreased.
If approved, alitame will be marketed under the brand name Novasweet.
