Pale malt is used in almost all British ales and many European ones as well. It is also used in American pale ales. It has a color of ~5-7 EBC, and before Pilsner malt was developed, it was the lightest malt available. Beers made from pale malt are typically coppery in color, and the malt imparts a slight sweetness. There are several varieties grown in Britian, the most famous being the highly prized Maris Otter. Others include Halcyon, and the Scottish varieties of Pipkin and Golden Promise.
Pale malt is the main ingredient in beers such as Bass Pale Ale, Boddingtons Ale, Sierra Nevada Pale Ale, and, believe it or not, Guinness Extra Stout.
