Back to the Dim Sum metanode

Best served with spicy soy sauce. Salmon makes great dim sum.

Ingredients

  1. Mix salmon, egg white, salt, pepper, sesame oil, and chives together. Place one tablespoon of mixture onto a wonton wrapper.
  2. Fold dough over to form a half moon. Moisten edges with beaten egg, then starting at the right, make 1/4" pleats to the left until you reach the end; press to seal. Bring 4 cups of salted water to a boil.
  3. Poach 8 dumplings at a time about 1 minute, or until dough is cooked through. Drain and serve.
