Ingredients:
2 2/3
cups shredded
coconut
2/3 cup
sugar
¼ cup all-purpose
flour
¼ teaspoon
salt

egg whites
1
teaspoon almond extract
1 cup chopped almonds (I don't use)
Instructions:
Combine coconut, sugar, flour and salt in a mixing bowl. Stir in the egg whites and almond extract. Stir in the chopped almonds (if desired); mix well.
Drop the mixture from a teaspoon onto lightly greased baking sheets. Garnish them with candied cherry halves, if desired. Bake at 325 degrees farenheit for 20-25 minutes, or until the edges of the cookies are golden brown .
Remove the cookies from the baking sheets immediately. The recipe makes about 2 ½ dozen.
