A slightly modified recipe for a
sort of medieval omelette. Orginaly this would have been
seen on tables pre 16th century, on the tables of (specifically German) nobles and poorer folk with access to flour. It is
basically a fried egg, but the weird addition of flour, and being fried not baked, makes it a 'flat cake'
Ingredients:
- 2
tablespoons cottage
cheese
- 1 egg, beaten
- 2 tablespoons
plain flour
- 1/2 teaspoon sugar
- 1 tablespoon butter
Beat the egg and cheese together. Add the flour and beat until
smooth. Heat the butter in a large skillet. Add the egg
mixture and cook until
egg is firm. Flip once. Cut the fritter into small pieces in
the pan using
a spatula. Cook until browned. Remove the fritters from
the pan and arrange on a
serving plate. Sprinkle with sugar. Serve hot.
