These
fruity salsas seem appropriate as warm, summer days approach. They can be used on
tortilla chips, fish, and anything that seems to work.
Papaya and Mango Salsa
Yields 2 cups
Ingredients:
- 1 mango, peeled, seeded, and diced
- 1 papaya, peeled, seeded and diced
- 2/3 cup diced red onion
- 1/3 cup diced sweet red onion
- 2 teaspoons grated fresh ginger
- 3 tablespoons chopped fresh cilantro
- 3 tablespoons fresh lime juice
- 2 jalapeno peppers, diced
Mix all the ingredients together and let the salsa sit for 30 minutes before serving.
Peach and Tomato Salsa
Yields 2 cups
Ingredients:
Mix all the ingredients together and refrigerate covered, for an hour. Allow the salsa to return to room temperature before serving.
