Ok, these are pretty vicious things to eat by themselves, but they go great with Danish feta, or a nice dilled havarti. I also use them in a handful of other recipes, and if I put them here, I don't have to type out instructions every time.

Do not core the apples! Just chop them into bite-size chunks and put them in a mason jar with the pint of vinegar. If the apples are of the size I have come to expect them to be, the jar should now be full. Put a lid on it, stick it in the back of your fridge, and forget about it for a few weeks. At the end of this, you should have a tangy snack food.
