Florence fennel is an interesting looking vegetable, rather like a squat celery with feathery leaves. It is called Florence or Floretine fennel because it originated around the city of Florence in northern Italy, and this also distinguishes it from the herb of the same name.

When buying Florence fennel look for white or pale green heads. The dark green fennel can taste rather bitter. Florence fennel has a flavour like aniseed or mild licquorice which goes well with fish.
