Lima beans are a close cousin of the Butter bean, with the butter bean being slightly larger and perhaps a bit richer tasting. Lima beans are roughly the size of a nickel, flat, and an odd pale somewhat limey shade of green. (for some reason the "seeds" from blue seed always vaguely remind me of lima beans, in shape... but tha's probably just me...) Lima beans are frequently cooked alone, but most often found in the southern dish succotash, with corn and usually carrots making up the rest of the dish.
