This can be done on a barbecue or grill. If you don’t have either, just broil.
This will serve around three to four people.
What You Will Need
2 blocks of firm cotton (tofu)
ancho chile or pasilla powder
onion powder
garlic powder
dried oregano
salt and fresh white pepper to taste
a few drops of sesame oil
a few tablespoons of Dijon mustard
What To Do Now
Combine the various seasonings in a bowl and mix until you have a thick paste.
Slice each block of tofu into six pieces. Rub well with the spice paste. In fact, let them sit in the bowl for a while. An hour or so is good, in order to allow the flavours to penetrate the tofu.
While cooking the tofu, remember that you are simply changing its texture and warming it through, so use high heat and don’t leave it on for too long otherwise it becomes first rubbery and then crumbly. Also, the spices can become bitter if they are burnt.
Serve on a bed of Boston lettuce leaves. The tofu can be wrapped in a leaf, picked up, and popped into the mouth.
