Spring Spinach Salad
Serves 4
Ingredients:
400 grams fresh baby Leaf
Spinach (About 1 lb.)
200 grams
Pine Nuts, cleaned (About 8 oz.)
Juice of 2 lemons
200 grams freshly grated
Parmesan Cheese (About 8 oz.)
Olive Oil to season (Not more than 1/4 cup)
Thoroughly rinse the spinach, remove the stalks and dry in a salad
spinner, if you have one. Otherwise rinse and sort the spinach placing the
leaves on a clean kitchen towel. Bundle up the towel loosley to dry the
spinach when you’re finished sorting the greens.
Toss the spinach in a salad bowl with the pine nuts, add the parmesan and
the lemon juice and some olive oil to taste. Leave for a few minutes and
serve.
If you're not serving it immediately, keep the salad it in the
refrigerator. It will keep the spinach leaves nice and crispy as they
should be. Enjoy!
