Pronounced "aay-ee-chee". A Navajo specialty, consisting of sheep intestine, filled with mutton fat, fried in lard, and then grilled. It has been around since the late 1600's, which is roughly when sheep were introduced to the Navajo by the Spanish. You can find aichee at flea markets and sometimes restaurants on the Navajo Nation.
Since I am vegan, I have never tasted the wonder that is aichee, though I have heard it is tasty from those who have.
