Chislic is usually made of lamb or beef, but can also be made with venison or other game. The meat is sometimes marinated, sometimes just fried on its own.
Because the meat is fried, it's not necessary the choice, tender parts of whatever animal we're talking about. One web page refers to it as "sheep butt on a stick".
