A cool little ceviche recipe thanks to homecooking.tqn.com. Shellfish and other whitefish can be substituted for the cod. You will need one and a half days to make it properly.

- Two bowls and a wooden spoon
- A strainer or colander
- A refrigerator
Preparation
Step 1
Ingredients
- 1 pound cod
- 1/3 cup fresh lemon juice
- 1/3 cup fresh lime juice
- 1/2 teaspoon salt
- 1/2 teaspoon whole oregano
Dice the cod into small cubes of about 1/2 inch. Mix all ingredients and
marinate for two hours in the refrigerator.
Step 2
Ingredients
- 1 tablespoon olive oil
- 1/3 cup fresh lemon juice
- 1/3 cup fresh lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 teaspoon ground pepper
Pull the
marinated fish out of the refrigerator and
drain all juice. Add all the above ingredients and
mix in:
- 1 finely chopped medium tomato
- 1/2 finely chopped medium onion
- 1 teaspoon vinegar
- 1 fresh seeded, minced jalepeno pepper (wear gloves)
- 4 oz cooked salad shrimp (optional)
- 1 tablespoon chopped cilantro.
Refrigerate for 8 hours, or
overnight. Serve on a
lettuce leaf, or on a
tortilla shell. Goes great with
chips. Makes 4 cups, serves 8
