Kabab kubideh is a great
Persian dish, and one of my absolute favorite
foods. Probably has a couple of alternate english spellings. Hard to say as I don't speak
farsi.
It is made with grilled ground meat that is put on skewers and cooked. Not very hard to make. In fact, here is a recipe for it that makes 4-6 servings.
Ingredients:
Drain any juice from the grated onion then mix everything, then let sit for a few hours, or in the refrigerator over night.
Press the mix, and shape evenly around 10-12 long metal skewers. Place the skewers a few inches from hot grill coals and turn constantly for a few minutes, and then cook on each side for a few minutes.
Serve with steamed rice. It is best when seasoned with soumagh, just pile lots of it on, is good with the rice too.
