Tasty chicken recipe:

4 chicken breasts
1 cup tortilla strips (or chips)
1/2 cup ranch dressing
1/2 cup salsa
1 cup various cheeses (jack, cheddar)

1/3 cup teriyaki sauce
2 tsp. lime juice
2 tsp. minced garlic
1 tsp. mesquite liquid smoke
1/2 tsp. salt
1/2 tsp. ground ginger
1/4 cup tequila

Pico de Gallo
3 cups diced tomato
1/2 cup diced red onion
1/4 cup fresh cilantro, minced
2 Tbs. canned jalapenos, minced
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. granulated garlic
3 Tbs. salad oil
3 Tbs. white vinegar


  1. Combine the marinade ingredients and marinate chicken breasts for 2-3 hours in refridgerator.
  2. Prepare the Pico de Gallo, stir well, and refrigerate.
  3. Combine the Ranch dressing and Salsa in a small bowl. Stir well.
  4. Cut about 2 tortillas into strips an inch wide and 3 inches long. Deep-fry briefly in hot oil until they turn crunchy and brown. Let drain on paper towels.
  5. Grill the marinated chicken until cooked through.
  6. Preheat the oven to 350F. Create a bed of tortilla strips, place the grilled chicken on the bed. Spoon the ranch dressing/salsa mixture over each breast, and top each breast with a quarter cup of cheese. Bake for about 10 minutes, or until the cheese melts and bubbles.

Top with Pico de Gallo and serve with Margaritas and Mexican rice.
