Decadent Mashed Potatoes
These are NOT low calorie, NOT dairy free, and NOT healthy. They are stupid yummy though.

Ingredients:
Potatoes - depends on how many people you are feeding
4oz butter
8oz cream cheese
Heavy cream
A few hefty dollops sour cream
A good amount shredded cheddar
Garlic/salt/pepper/herb blend (pick your favorite)
Wash and dice the potatoes, cook in salted water until they are soft enough to mash. I never peel them. Dump them in a colander to drain. Drop the butter into the still hot pot the potatoes were cooked in, and dump the potatoes back in on top. Start mashing. The heat from the potatoes and the pot will melt the butter. Add the cream cheese, a hefty dollop or two of sour cream, the desired amount of cheddar, and heavy cream to make it creamy. Mash together until all the ingredients are melted and incorporated, if needed, turn the heat back on low. Once creamy, add the seasoning to taste. Serve and enjoy!
I have found this recipe does not even need gravy. I tend to add a lot of the garlic spice, since I REALLY like garlic.
