Fresh Tomato Soup (makes 4 cups)
3 Med. Tomato, peeled, seeded & quartered (or 14.5 oz canned tomato)
1.5 Cup Water
1/2 Cup Onion (1 Med)
1/2 Cup Celery (1 Stalk)
1/3 Cup Tomato Paste (3 oz)
2 Tbs Snipped fresh Cilantro or Parsley
2 Tsp Instant chicken bouillon granules
2 Tsp Lime or lemon Juice
1 Tsp Sugar
Dash Hot Sauce
- Combine tomatoes + water + onion + celery + paste + herbs + bouillon + juice + sugar + hot pepper sauce
- Boil then reduce heat.
- Simmer 20 min. or until celery + onion are tender
- Cool slightly
- OPTIONAL: Puree, then return to stove + heat through
- Garnish with parsley or cilantro
When I moved to Massachusetts after graduating from college to join Americorps, my older sister made for me a small cookbook of recipes that she had accumulated over the years. This is one of those recipes, which taught me how to feed myself with good, healthy and delicious food.
