Hershey's makes cinnamon chips used for baking, similar to butterscotch or
chocolate chips. They are the key in these tasty cookies.
Ingredients:
- 1 c. butter, softened
- 1 c. light brown sugar, packed
- 1/3 c. granulated sugar
- 2 eggs
- 1-1/2 tsp. vanilla extract
- 1-1/2 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 2-1/2 c. quick-cooking oats (Quaker's)
- 1 pkg. cinnamon chips
- 3/4 c. raisins (optional)
Preheat oven to 350 degrees. Beat the butter, brown sugar, and sugar in a bowl until creamy. Beat in the eggs & vanilla, this will get goopy, but it's standard. In a separate bowl, mix the flour, cinnamon, & baking soda. Gradually mix the dry mix into the goopy mix until it is one thoroughly homogeneous mess. Stir in the oats and the cinnamon chips, and if you want them (ick), the raisins. The batter will be terribly stiff, and hard to beat. Once it's mixed well, drop this gak onto an ungreased cookie sheet in heaping spoonfuls. Bake 10-12 minutes, or until the edges of the cookies are golden brown. They may look wet in the center, but it's an illusion. They're done, really. Let them cool sufficiently before taking them off the baking sheets. Enjoy!
