Cyser is a mead made with apples. A recipe for a simple cyser is:

1 gallon glass bottle of apple juice
2 pounds of honey (get it at the supermarket so you don’t need to sterilize)
1 airlock and drilled bung (available at any local brew shop)
1 package of yeast (5 grams)

Sterilize the air lock and bung and a large bowl with household bleach. Make sure to rinse until there is no bleach smell left. Pour about 1/4 of the apple juice into the sterilized bowl. Next add the honey to the bottle of apple juice. Shake well. Rehydrate the yeast according to the instructions on the package. Add the yeast to the bottle. Top off with the apple juice from the bowl. Stopper the bottle with the bung and airlock and place it in a warm place with no sunlight. When the airlock only bubble once every 15 minutes then its time to bottle the cyser.
This cyser will become a very dry mead with a fruity apple taste.
