This is an extremely simple way to jazz up a piece of beef, chicken or lamb that you just bought at the butcher. (Sorry to vegetarians, you may wish to look here). They are confrontational flavours that suit meat so well: upfront, punchy and savoury.

The whole business is pretty simple, just brush the meat with olive oil, then roll in this seasoning, grill or panfry until done, a few minutes work and loads of flavour.

Ingredients

  • 2 Tbs cumin seeds
  • 2 Tbs Black peppercorns
  • 2 Tbs Coriander seeds
  • ½ Tbs Sea salt
  • 4 Green onion shoots, chopped
  • 1 Clove garlic, or use garlic oil

    Method

    Throw all the ingredients into a spice grinder, food processor or mortar and pestle (or just smash it all up in a kitchen towel). Grind to a rough paste, then coat whatever meat you choose. Grill or fry first to achieve a nice tasty crust. Maybe serve it with some mashed potatoes and smoked tomatoes.
