Just outside of Nampa, Idaho there is a cheese factory. (There is also a sugar refinery which stinks up the whole town, but that’s another story.) When my sisters and I were young children and we got to visit our grandparents in Nampa, It was a rare treat to stop at that cheese factory and get the amazing delicacy we called squeaky cheese.

Squeaky cheese is the fresh curd after it’s been separated from the whey, but before it’s pressed into molds. It’s light and cool and very smooth. It came moist, in nugget-shaped pieces and when we bit into them, they squeaked against our teeth.

I’d like to try it again. I haven’t tasted it in 20 years or more.
