This is one of my favourite teas to make, not only because I always have all of the ingredients on hand in my pantries, but also because it has no caffeine, no tea leaves or tea bags to deal with. Its aromatic spicy scent permeating the house on a cold winter day takes my mind whistling back to my childhood tea parties.
We always used rainwater, when it was still pure and clean falling from heaven. You may substitute tap water or bottled water.
To one gallon of water add:
10 whole cardamon seeds
10 whole black pepper corns
10 whole cloves
2 sticks of cinnamon
2 bay laurel leaves
Boil for 20 minutes.
Add a few drops of pure maple syrup to each cup for sweetener.
