The classic Israeli salad or “vegetable salad” as it is called locally (In Hebrew) is basically cucumbers and tomatoes chopped rather crudely with some salt and vegetable oil mixed in.

Onions, Parsley, Cherri Tomatoes, Lettuce, Pine seeds and other vegetables may be added, but the cucumbers and tomatoes are the basis of the salad and should be at least 80% of the volume.

This is not to be confused with the term “Salatim” (The plural for salad) which would be a reference to the many types of Middle Eastern spreads that would accompany a typical meal or pita.
