Curried potatoes (thing)

Curried Potatos

Ingredients

3 tablespoons canola oil
1/2 teaspoon black mustard seeds
1 teaspoon ground cumin
1 1/2 teaspoons ground tumeric
1/2 teaspoon hing or asafetida
1/2 teaspoon cayenne powder
1 teaspoon fennel seed
1 1/2 teaspoons salt
8 potatoes, peeled and diced
1 cup water or coconut milk

In saucepan, heat oil over medium heat and add mustard seeds. When they turn gray and start to jump, add remaining ingredients, sitr and cover. Simmer until potatoes are done, about 20 minutes.
