The chipolata (pron: chip-o-LAH-tah) is a tiny pork sausage often mistaken for small cocktail frankfurters. They're sold in bunches of links.

Chipolati are a particularly spicy sausage, with a lovely peppery and smokey flavour. With their two-bite size, they really are the ultimate in stand-up party food.

The common constituents include pork butts, pork fat, sage, onion, thyme, mace, salt, pepper, and breadcrumbs. Some extra-spicy recipes call for chilli flakes.

The fresh sausage links are grilled or boiled, and served hot, often on toothpicks.
