To decorate, embellish, or otherwise attempt to improve on something that doesn't much benefit from such improvement. Putting butter on coffee cake is a lily-gilding practice.
The expression comes from a misquotation from Shakespeare's King John; the actual passage says "To gild refined gold, to paint the lily"
