I met George Takei the last time I was in Pasadena, California. His last name is pronounced "tah-kay, like tah-day". His family was held in an internment camp during World War II, and one of George's passions is making sure that everyone does not forget that shameful event in United States history. He was in town working with several Asian-American actors on a play to raise money for a memorial.
Of all the Star Trek personalities I have personally met, I would have to say that George is the most down-to-earth gentleman you can meet. He is intelligent and very witty, and he takes his time to pay attention to who you are when you meet him. Be prepared to have him actually ask you questions if you encounter him, as he's interested in whoever is interested in him.
