Evelyn's Lemon Curd
Evelyn Bayers Ottaway was my paternal grandmother.
2/3 C granulated sugar
1/4 C butter
grated rind of one lemon
juice of two lemons
3 eggs
Break the eggs in a saucepan and beat slightly. Add the other ingredients and cook over low heat, stirring constantly. The mixture will become thin but will gradually thicken until it is custardy -- about 15-20 minutes.
Good in tarts!
