This is my dad's recipe for smoked salmon. We live on the Oregon coast, so we have plenty of salmon and other fish.
SMOKED SALMON
- Salt and Pepper to taste
- 1/3 cup brown sugar
- 1 TBSP. salt
- 1 cup soy sauce
- 1 cup water
- 1 cup white wine
Mix all of the above in a covered bowl.
Add enough salmon to fill your smoker.
Cover tight and put in refrigerator for 12 hours, sloshing occasionally.
Put on a paper towl to drip for 8 hours.
Smoke to Taste.
