Bierwurst is a German cooked salami-style sausage with a very high garlic content, and having a dark red colouration.

The pork meat and fat and beef meat is chopped roughly to result in a nice chunky texture. It is seasoned with garlic, pepper and onion, packed into wide diameter casings, and smoked at high temperature.

Interestingly, bierwurst does not contain beer, although served sliced it is an excellent accompaniment to a bright German lager.
